Garnish
In a small saucepan, combine 50 g sugar and 50 ml water.
Heat gently over low heat, stirring until the sugar dissolves completely.
Set aside to cool.
In a large jug or pitcher:
Pour in the 250 ml Sicilian lemon juice
Add the cooled sugar syrup
Stir to combine
Slowly pour in the 1000 ml sparkling water.
Stir gently to mix, keeping the bubbles lively
Fill glasses with ice cubes.
Pour in the lemonade.
Garnish with fresh lemon slices and a few sprigs of mint.
